01 / ABOUT THE PLACE
A rich, toasted aroma drifts down the street in Higashi-Jujo, leading directly to Maya Coffee Roaster. Inside, neatly arranged green coffee beans sit alongside roasters large and small. The shop’s defining feature is that you can select unroasted beans from the display and have them roasted on the spot. With more than 20 varieties in stock and purchases available from as little as 100 grams, it is easy to sample different roasts according to your preference for acidity, bitterness, or brewing method. If you are unsure where to start, sharing your taste preferences with the staff will yield personalized recommendations, such as single-origin beans from Ethiopia.
The roasting process takes around 15 minutes, but watching the beans transform as the air fills with deepening aroma is part of the experience. Customers buying beans may be served a complimentary cup of freshly brewed coffee, offering a peaceful moment while waiting for the order. If you are short on time, you can also place an order and run errands nearby before returning to pick up your beans.
The shop has around 5 seats where visitors can sit down for a quiet coffee break. The drink menu features smooth, approachable house blends, crisp and full-bodied Indonesian iced coffee, and finely textured caffè lattes. Shortbread and coffee yokan make tempting accompaniments. Whether stopping by for a takeaway cup on a neighborhood stroll or picking up custom-roasted beans to brew at home, Maya Coffee Roaster is a dependable local stop.
